The math is just a proportion:

Protein (g) = serving weight (g) / 100 × protein per 100 g

Because your input can be in several units, the calculator first converts the serving into grams. For ounces it multiplies by 28.35. For cups and tablespoons it uses a standard cup weight for the selected oat type. Once the weight is in grams, it applies the protein-per-100g ratio.
